Apple and Carrot Oat Squares
These apple carrot oat squares are a great recipe for baby’s and toddlers. Soft, easy to eat and full of great ingredients. Full of fibre and sweet flavour from the apples, carrots and hint of cinnamon. I added honey to this batch for my older kids but it doesn’t really need it and can be left out for baby’s (before 1 year old, it is not safe for baby’s to consume honey due to the risk of botulism). Similar to a muffin recipe, these bars come together pretty quickly. Would be great with a side of fruit for breakfast or snack, add in a slice of cheese or yogurt and you’ve got lunch. Versatile, yummy and very friendly for new eaters.
Apple and Carrot Oat Squares
Makes 12
Dry ingredients
1 cup whole wheat flour
3/4 cup old fashioned oats
1 tsp baking soda
1/4 tsp salt
1 tsp cinnamon
Wet ingredients
1/3 cup applesauce, unsweetened
1 egg
1/4 cup vegetable oil
1/4 cup honey or maple syrup
1 tsp vanilla
1 apple, grated ( I used a Gala apple)
1 carrot, small, grated
Directions:
- Preheat oven to 350 degrees and grease or line 8x8” baking dish with parchment 
- Combine dry ingredients in a small bowl and set aside 
- Combine applesauce, egg, oil, honey, vanilla in a larger bowl 
- Add dry ingredients to wet ingredients and stir to combine, careful not to over stir 
- Fold in apple and carrot 
- Pour into prepared baking dish and bake for 40 minutes
