Chocolate Coconut Oatmeal Cookies
Who doesn’t love a good old oatmeal chocolate chip cookie. This one is crispy on the outside and chewy in the middle with a hit of coconut flavour. Great for snacks and satisfies a sweet tooth!
Chocolate Coconut Oatmeal Cookies
Makes 24 cookies
Dry ingredients
1 cup whole wheat flour
¾ cup quick oats
2/3 cup unsweetened, shredded coconut
1 tsp baking soda
¼ tsp salt
½ tsp cinnamon
1/3 cup mini chocolate chips
Wet ingredients
½ cup butter, softened
¼ cup brown sugar
¼ cup granulated sugar
1 egg
½ tsp vanilla
Directions:
- Preheat oven to 350 degrees and grease or line 2 baking sheets with parchment paper 
- In a small bowl, combine dry ingredients, mix well and set aside 
- Using an electric mixer, cream together butter and both sugars 
- Add in egg and vanilla and mix at low speed until all ingredients are combined 
- Pour dry ingredients into wet and mix well with a spatula 
- Use a tablespoon to measure out cookies and place on baking sheet keeping space around each cookie 
- Bake for 10-12 minutes 
- Cookies will still be soft and look under baked when you take them out of the oven, this means they will be soft and a bit chewy in the centre
